Walt's wine dinner paired with Alaskan seafood
Walt Wickman, talented chef/owner of Walt's Seasonal Cuisine (140 Main St., Dunedin, (727) 733-1909) is throwing a wine dinner Wednesday, July 22 at 6:30. He's pairing Alaskan seafood with wines from Washington State and Oregon. There will be multiple types of wild salmon, three types of crab and Alaskan spot prawns. Each type of seafood will be explained by Eric "The Crab Broker," whose company specializes in fresh Alaskan seafood. Dinner is $100 per person (including tax and gratuity), reservations in advance. Here's the menu:
Course 1: Alaskan crab-stuffed king crab tail with baby arugula, mango, and mango vinaigrette
Wine: Foris Pinot Gris
Course 2: Grilled wild Alaskan salmon (Sockeye salmon and King salmon) with summer ratatouille and key lime butter sauce
Wine: Panther Creek Pinot Noir
Course 3: Alaskan crab trio (king crab, Bairdi Crab and Opilio crab)
Wine: Eoala Hills Chardonnay
Course 4: Poached Alaskan spot prawns with a chorizo and feta creme sauce
Wine: Foris Fly Over White
Course 5: Summer berry creme brulee
Wine: Kiona Late Harvest Riesling
