Holiday Walnut Berry Bites
Nonstick cooking spray
2 ½ cups all-purpose flour
1 cup (2 sticks) cold, unsalted butter, cut into pieces
½ cup confectioners' sugar
¼ teaspoon salt
1 ⅓ cups Karo light corn syrup
1 cup sugar
3 tablespoons unsalted butter, melted
2 cups fresh or thawed frozen cranberries, coarsely chopped
1 cup walnuts, chopped
1 cup white chocolate chips
Preheat the oven to 350 degrees. Lightly coat a 12 1/2- by 17 1/2- by 1-inch baking pan with non-stick cooking spray. In a large bowl, beat flour, butter, confectioners' sugar and salt at medium speed until mixture resembles coarse crumbs. Press firmly and evenly into pan. Bake 20 minutes or until golden brown.
In a large bowl, beat Karo syrup, eggs, sugar and butter until well blended. Stir in the cranberries and walnuts. Spread mixture evenly over hot crust. Sprinkle white chocolate chips over the top. Return to oven and bake 25 to 30 minutes or until set. Cool completely on a wire rack before serving.
Yield: 4 dozen.
