Recipes for the George Foreman grill: mustard lemon chicken

I'd like some recipes for the George Foreman grill. Chicken, beef and seafood would be great. Thank you.

Mildred Arnone of Largo shares a recipe for the George Foreman grill. When Dana sent her request she did not specify which type of George Foreman grill she has. I did an Internet search and found there are more than 10 models. I do not own one so I borrowed one from a friend. Her model did not have various settings but it did have double element grills, meaning it cooks both sides at the same time. It worked fine but I wish I would have pounded the chicken breast to make it cook more evenly. The tangy marinade made from mustard, balsamic vinegar and lemon juice keeps the chicken very moist. While the recipe calls for a half-hour marinade, I marinated mine overnight and it was delicious. The longer you marinade it, the more flavorful it will be.

Mustard Lemon Chicken Breasts

2 tablespoons mustard

2 tablespoons balsamic vinegar

3 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon paprika

4 (6 ounce) chicken breasts, halved, boneless and skinless

In a medium bowl, combine mustard, balsamic vinegar, lemon juice, garlic and paprika. Whisk together. Add chicken breasts and turn to coat chicken in marinade. Cover and refrigerate at least half an hour.

Preheat the indoor-outdoor grill on Setting 4 (if your grill doesn't have that, adjust to the appropriate level) for 10 minutes. Cover and cook for 7 to 8 minutes. Turn and cook another 7 to 8 minutes.

Serves 4.
