You Asked For It: Poppy seed dressing recipe

I would like the recipe for the poppy seed salad dressing from the Island Hotel in Cedar Key. Thank you.

Fellow Dunedin resident Nancy Eggert shares a recipe that she got from the Good Housekeeping Illustrated American Cookbook. Nancy shares that this is one of her favorite cookbooks, which she got at a garage sale about 20 years ago. For the grated onion, Nancy uses a white onion. The cider vinegar gives this a great flavor, but if you're not fond of it, white vinegar would be a fine substitute. This dressing can be used on a green salad, fruit salad or cottage cheese.

Poppy Seed Dressing

1 cup vegetable oil

½ cup sugar

1/3 cup cider vinegar

1 tablespoon poppy seeds

1 tablespoon grated onion

1 teaspoon salt

1 teaspoon dry mustard

In a blender, combine the oil, sugar, vinegar, poppy seeds, grated onion, salt and mustard. Cover and blend on medium speed until thoroughly mixed; the dressing will be thick. Store tightly covered in the refrigerator. Stir before serving.
