Taster's Choice: Ice cream cakes

As nights grow longer and we move dinner from the dining room to the patio, it's a good time to bring out the ice cream desserts. A few more months and it'll be too hot for eating ice cream or anything else outdoors. But April's weather might cooperate for celebrations with ice cream cake. Taster's Choice panelists didn't need a special occasion to sample any of the four ice cream cakes we found at local grocery stores.

Fresh-tasting cake and sweet, creamy icing were the qualities that made Sweetbay's ice cream cake the top pick for our judges. They raved about the "yummy" layers of chocolate and vanilla ice cream and the "almost fluffy" texture of the marshmallow frosting. "I especially like the good, thick vein of cookie crumbs between the layer," said one judge, who described the neon-blue colors on the decorated cake as "retina-thrashing."The ice cream on this restaurant chain's cake was lighter, similar to ice milk. Judges enjoyed that smooth texture as well as the Oreo-cookie-like filling. "It's got a creamy, stick-to-the-roof-of-your-mouth

topping," said one panelist. "That's a good thing."
Servings and slices from this store's cakes were generous. Judges loved the fancy appearance, describing it as the "most handsome" of the frozen cakes. The cake itself was compared to pound cake. A couple of panelists said it was a bit dry, but that was the attraction for others. "It has pretty beige and brown layers with a trim chocolate edge," said one. "I would probably add a little drizzled chocolate or some fresh raspberries to jazz up the bland cake."The ice cream was the star of this cake. Judges liked the bold flavor, saying they detected a pleasing hint of almond. The cookie filling between the layers wasn't a favorite among panelists. One compared the crumbs to "chocolate gravel." They said the cake part of the dessert seemed like a bit of an afterthought.
