Ah, rotisserie chicken. A beacon of comfort in a warm crinkly package, that whole bird just waiting to be carved up and put to use in a wide variety of recipes.
With your protein already cooked, you can focus on building other parts of the meal. Here are five ways to put rotisserie chicken to good use.
Edamame Rice Bowls
I order trendy bowls at fast-casual restaurants all the time, so why not make my own at home? The key is to take the time and care to prep some of the ingredients separately. Roast some veggies in the oven beforehand until they’re nice and caramelized. Cook some basmati rice. Char some edamame in a cast iron skillet. And add some of that rotisserie chicken!
Enchiladas
Since everything you are putting inside of these enchiladas is cooked, you can prep the enchiladas ahead of time and put the dish directly in the freezer, thawing when you get home and then cooking in the oven according to the recipe. Or you can make the entire recipe, let the dish cool, then freeze the enchiladas until you need them.
Cobb Salad
This salad is ideal for summer because it’s a filling meal that doesn’t require oven time. The recipe has you make your own dressing, but you could also throw on some creamy storebought stuff and call it a day.
Ricotta and Chicken Toast
Toast loaded with lots of toppings is one of my go-tos when things get crazy and I need to eat something fast. This one is adapted from a recipe in Chrissy Teigen’s Cravings cookbook, and it is delicious.
