Nearly two years ago two educators started Hey Giant!, as a learning enrichment center in Seminole Heights, that provided free learning and creativity classes for kids and hosted game nights and camps.

Shocked by the center's popularity among K-12 kids, the center started making biscuits at the pop-ups to fund its programs, and once the biscuits became a favorite, the brand decided to open a permanent biscuit shop in Seminole Heights called Hey Giant! Little Biscuits.

The biscuit shop at day and learning center at night rose in popularity for its creative, made from scratch biscuit combinations such as the rosemary and lavender biscuits with strawberry butter, the leaning tower of PB&J biscuit, the honey ham biscuit, cinnamon sugar biscuit, or the classic buttermilk biscuit.

Now the business has brought its "little biscuits" to its new location at 3201 S Dale Mabry Highway in the space previously occupied by a baking company, with a limited menu and is slated to host a grand opening celebration later this month.

The shop held a soft opening beginning Wednesday (Sept 5) and according to co-owner Jesse Thompson, these first weeks serve as a preview for them to learn the ins and outs of the new space and perfect their craft.

"We did have plans for a second location, but we didn't expect this to happen this soon," he said.

"Seminole Heights has been successful, the community has supported us well, and we have a number of customers in South Tampa so when we got the opportunity over the summer we said let's go there."

If all goes well they'll introduce their additional biscuits such as a smores biscuit and ones with meat like ham and bacon.

Hey Giant! Little Biscuits focuses on biscuits which come in pairs and ranges from $3 to $13, but also offers coffee and tea.

They currently operate from 10 a.m. to 2 p.m. Wednesday through Sunday and will eventually resemble its Seminole Heights location hours from 7 a.m. to 2:30 p.m. Wednesday through Friday, and 8 a.m. to 2:30 p.m. Saturday and Sunday.
