SPRING HILL ó Cracovia Restaurant and Deli, whose off-and-on construction has been under way for more than 10 months, hopes to open in May, according to owners Grazyna Machnik and her husband, Richard Zabryski. With the building completed, the native Polish couple, now Spring Hill residents, are awaiting furniture delivery, Machnik said on Monday.
"Weíre self-funded, and putting the money together. Itís coming," she said. Necessary permits have been approved, Machnik said.
The couple has hired its chief cook, a Polish native with 15 years of restaurant experience in Chicago. Employment applications for kitchen, bakery and deli workers, plus wait staff, are available at the site, 3007 Commercial Way. Hiring 40 employees will take two to three months, Machnik said.
"Sixty to 70 people per day are stopping by," she said. "Lots of Polish people here." Unfortunately their opening wonít come soon enough for those who want Polish dishes and bakery specialties for Easter on April 1.
The couple previously owned and operated a bar-restaurant in New Jersey.
The restaurantís name, Cracovia, refers to Cracow or Krakow, one of the oldest and the second largest city in Poland.
