Here are some of the fair foods on this year’s menu, all available at the Carousel stand near the Charles M. Davis Special Events Center:

Mac and cheese burger
This burger features a standard bun, burger patty, bacon and a scoop of macaroni and cheese.

The Polish boy
A kielbasa sausage that is grilled, and then placed on a toasted garlic roll topped with barbecued pork, slaw, fries and barbecue sauce.

Bacon peanut butter burger
Elvis would have loved this — get it with a banana on top for the full King experience.

Deep-fried mashed potatoes
A favorite from the Texas State Fair: Big balls of mashed potatoes are injected with gravy and then battered and fried.

Deep-fried bubble gum
Consists of bubble-gum-flavored marshmallows dipped in a batter and deep fried “as is,” then drizzled with a pink and blue icing and a few Chicklets sprinkled on top.
