Here in Florida, Land of No Seasons, it's hard to tell when certain produce is having its moment. Take apples, for instance. Up north and in the Midwest, they're already picking the crispy red orbs from trees. The next few months are prime apple season. So even though our grocery stores have apples year-round, expect soon to see more variety, and maybe even at a reduced price.

It is a good time of year to try to work the fruit into as many of your meals as possible.

That's the inspiration behind this week's #CookClub recipe, a simple yet addicting salad that combines crunchy apples, salty cheese and nuts. You can easily turn this into a heartier salad, perhaps more suitable for dinner, with the addition of chicken or even steak.

Spinach Apple Salad

Spinach Apple Salad

Ingredients

  • For the salad:
  • 1 red apple
  • 1 green apple
  • 6 cups greens, like a combination of arugula and baby spinach
  • 1 cup walnuts, roughly chopped
  • ⅓ cup crumbled feta or Gorgonzola cheese
  • ⅓ cup dried cranberries
  • ½ cup cooked chicken or steak, optional
  • For the dressing:
  • 1 cup apple juice
  • 4 tablespoons apple cider vinegar (or white vinegar in a pinch)
  • 2 tablespoons honey
  • ¼ cup oil
  • Scant ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Core and chop apples into thin slices or 1-inch chunks. Toss spinach, apples, walnuts, cheese and cranberries together in a large bowl. Add chicken or steak to bowl.
  2. Whisk together all dressing ingredients. Add more salt and pepper, if desired, to taste. Toss with salad immediately before serving. Serves 4.
