Easy weeknight meals: Greek Pizza With Chicken and Artichoke recipe and more

Mon | Meatless meal

A bowl of cooked brown rice is a blank canvas for lots of toppings. Consider sauteed wild mushrooms, goat cheese and chives; smashed black beans and avocado chunks with a dash of Sriracha sauce; sauteed garlic spinach and chickpeas; diced tofu, soy sauce and crunchy veggies. Fresh fruit on the side.

Tues | Fast fettuccine

We've made Shrimp Scampi Fettuccine before and it's a dish worth repeating. Saute garlic and minced shallots in a mixture of butter and olive oil. Don't let the garlic go brown; keep stirring. Add peeled shrimp and a few good splashes of white wine (or chicken broth). Let shrimp cook through and serve over hot fettuccine. Green salad on the side.

Wed | Rotisserie chicken

Greek Pizza With Chicken and Artichoke (recipe below) celebrates Mediterranean flavors and the convenience of a rotisserie bird. You will need a couple of cups of chicken so you'll have a little left over for salad, if you'd like. Use whatever kind of pizza dough you prefer — or even a Boboli crust.

Thurs | Dinner vows

Make a quick pot of Italian Wedding Soup by bringing 8 cups of chicken broth to a boil with rind of Parmesan (optional). Turn down the heat and add 1 pound mini frozen meatballs, 1 cup orzo and 3 cups torn greens (escarole or spinach). Simmer until orzo is tender and meatballs are heated through. Remove the Parmesan rind before serving.

Fri | Easy bake

Go easy on yourself tonight with Baked Ravioli Casserole. Prepare a couple of bags of cheese ravioli, drain and arrange in a baking dish. Cover with sauce of your choice (herb, pesto, red or Alfredo) and sprinkle with mozzarella cheese and Parmesan. Bake at 350 degrees until heated through and cheese melts. Serve with a green salad and bread.
