Taste test: blueberry pancake mixes

Blueberry pancakes make any breakfast seem special. Our tasters prefer to add their own berries, but when they don't have a chance to get fresh fruit, a boxed mix will do the trick. We sampled seven brands of blueberry pancake mix and prepared them according to package directions. All seven were cooked on a stovetop griddle with good results. We found several options worthy of whisking up for Easter brunch.

Texture was the key to this brand's success. Judges described the samples as cakelike and airy. "These look like the perfect morning — just after an early morning shower and if the butter was left out all night so it is nice and soft," said one judge. "These are generous with the blueberries, have great flavor and beautiful shape." A couple of judges wanted even more blueberries, saying they would use this mix and add more fruit.Judges were divided on this pancake mix. A couple raved about the freshness and sweetness of the berries, while a couple said they were too few and too crunchy. "These actually have real berries and they are toasty, too," said one panelist. Another liked the taste but questioned the amount of berries, saying the griddle cakes would be a good base but could handle the addition of several types of berries, whipped cream and syrup."Comforting" was the word judges used to describe these pancakes. "They are nice and grainy with an explosion of blueberries," said one panelist. "They are slightly sweet with great texture." Another said they were homemade tasting, golden and buttery looking. "These are great buttermilk pancakes with a bonus of blueberries," said a taster who also appreciated the airy consistency of the cakes.
