Each fall, my favorite coffee bar bakes huge gingersnaps topped with shiny crystals of sugar. I prefer them right out of the oven when they are warm and soft. But our panelists are purists when it comes to gingersnaps: They want that snap. We tried nine brands of store-bought gingersnaps. Panelists clearly preferred the cookies with a proper crunch over the chewy options.
