Citrus, yogurt provide a flavor boost to salad

The calories and fat in a salad usually are concentrated in the dressing, but most of us don't like salad without the flavor boost a dressing gives. This salad has an easy creamy dressing made with yogurt that provides a delicious answer to the high-fat dressing problem.

To enjoy the dressing with vegetable salads or greens, substitute a pinch of dried dillweed or crushed basil for the ginger.

Citrus Coleslaw

{ cup orange or lemon low-fat yogurt

1 tablespoon skim milk

[ teaspoon ground ginger

3 cups shredded coleslaw mix or 3 cups of shredded cabbage and grated carrot

One 11-ounce can mandarin orange sections, chilled and drained, or 1 cup fresh orange sections, drained

In a medium mixing bowl combine yogurt, milk and ginger. Stir together well. Add coleslaw mix and orange sections; toss to coat. Makes 4 servings.

Nutrition information per serving: 94 cal., 2 g pro., 22 g carb., 0.4 g fat (4 percent of calories from fat), 1 mg chol., 35 mg sodium. U.S. RDA: 54 percent vit. A, 63 percent vit. C, 10 percent calcium.
