For fair food with a vengeance, head to Dade City to sample Pasco's most unusual crop, gators. Alligators _ live, fried and reduced to purses _ star in the Alligator and Indian Expo during the Pasco County Fair (State Road 52, Dade City; 567-6678) through Feb. 23). Try samples from the gator industry, plus alligator chili from Skipper's Smokehouse in Tampa, a concession stand with a full gator menu and an alligator cookoff. For a dressier spread, meet the Napa Valley Vintners Tour in Sarasota. Winemakers offer vintages of 35 labels at the Phillipi Mansion (5500 S Tamiami Trail) from 7 to 9:30 p.m. Tuesday.
