Creme de la low-fat creme

Part-skim or non-fat ricotta can sub for whipping cream in a lot of fruit and other desserts.

Here's how: Start with \ cup confectioner's sugar to 1 cup ricotta and add { teaspoon vanilla or \ teaspoon almond extract.

Or dissolve 3 tablespoons brown sugar in 2 tablespoons Amaretto, Gran Marnier or Kahlua to 1 cup cheese.
