Roger West of Gainesville uses a sonogram unit Wednesday to measure the fat content and rib eye size for the meat grading of steers at the Citrus County Fair. This is the first year the sonogram measurements have been used. West retired from the University of Florida and is the only person in the Southeast to use the method. The measurement is needed for a carcass because Florida has no national slaughterhouses, and every year some contestants would not receive carcass measurements back for inclusion in the competition.
