Hot water in the restroom. Cold water isn't enough to clean hands of employees or customers, but some stingy places cut off hot water to sinks to save a few bucks. To post signs that employees must wash hands and deny them the means is hypocritical, cheap and unhealthful. State health rules say restrooms for workers must have hot water (and be separate from food sinks); restrooms for customers only can be left in the cold, but we will notice. So for 2005, owners should resolve to turn on the hot water. If not, customers resolve to turn up the heat.
