Three things to make with a can of cannellini beans

Got a can of cannellini beans on hand? They come in handy for a quick meal. Here are three ideas.

For each of these recipes, start with 1 can of cannellini beans, rinsed.

Zesty White Bean Dip

De-seed 1 red pepper and roast under a broiler until skin is slightly charred and pepper is soft (or use jarred roasted red peppers). Add to a food processer with cannellini beans, 2 garlic cloves, 3 tablespoons fresh lemon juice and a generous pinch of both salt and paprika. Turn on food processor and let it run for a couple of minutes, adding ¼ cup olive oil until mixture resembles a smooth puree. Serve with crackers or carrots.

Bean and Jalapeno Burritos

Mash cannellini beans in a bowl and add ¼ cup finely chopped fresh cilantro, 1 finely chopped jalapeno, 1 cup shredded cheddar cheese and 1 tablespoon fresh lime juice. Divide filling among 16 small tortillas, then roll up tightly to form mini burritos. Bake in a 425-degree oven, seam side down, on a parchment-lined baking sheet until tortillas are crisp and just beginning to crack, 15 to 20 minutes. Recipe adapted from Bon Appétit.

White Bean Crostini

Make a pesto of sorts: In a food processor, add a handful of fresh mint or basil, fresh lemon juice from 1 lemon and ¼ cup olive oil. Transfer to a bowl and season with salt, pepper and a dash of red wine vinegar. Stir in coarsely mashed cannellini beans and stir well to combine. Spread on little pieces of bread that have been lightly toasted and serve.
