TAMPA — As Uziel Ramirez stared at his computer screen, reading reviews of his new restaurant, Xtreme Tacos, tears started to run.
"I never guessed I would get this response from the community," Ramirez said. "It gives me goose bumps when people tell me they've never had anything like what I make for them."
Early each morning, while his mom Paulina Ramirez is in the kitchen baking homemade tortillas, Uziel is at the produce market, picking out the ripest avocados, onions, tomatoes and jalapenos for that day's orders.
"It's a small, little place so we can't store too much food so everything we make has to be served that same day," Ramirez said. "My mom is making tortillas all day long, by hand. People love watching her make them."
Those tortillas are then stuffed with shredded chicken or beef, carnitas, grouper, sirloin steak or pork al pastor.
"I've had food on the streets of Mexico," Uziel said. "Our tacos are a combination of authentic Mexican tacos which start with our tortilla, then we add what everyone here likes, sour cream, cheese, cabbage, onions, tomatoes, cilantro and fresh limes."
As well as navigating the streets of Mexico, Ramirez has traveled the country tasting tacos.
"Every time I taste a restaurant, food truck, taco stand, everything taco I'm always eating and comparing and tasting to see what I like, what I don't like," Ramirez said. "Over the years, I've been writing it down in my little notebook because I knew when I had enough money to make it happen, I'd make it happen."
Xtreme Tacos held its grand opening last month at 310 E Waters Ave. It's open from 11 a.m. to 8 p.m. Sunday through Thursday and 11 a.m. to 9 p.m. Friday and Saturday.
