From a prime porterhouse steak to a center-cut chateaubriand, Prime 88 serves only the highest-quality dishes. The restaurant sources their steaks from Iowa Premium, a leading provider of USDA-certified Black Angus beef.

“Unlike other steakhouses, we source all of our beef from the same people all of the time,” said John Corbin, Prime 88′s executive chef.

Each day, the Prime 88 team selects and hand-cuts its meat and seafood to create the best possible dishes for customers to enjoy.

The restaurant is known for its filet mignon and rib-eye steaks, but also offers an aromatic array of upscale cuisine, including chicken piccata, yellowfin tuna, grouper, cedar-plank salmon, oysters by the half-dozen, a charcuterie plate and more. Starters like calamari or escargot whet your appetite, while decadent desserts, like key lime pie, crème brulee or a bananas Foster split, provide the perfect final note to complete your evening.

Additionally, Prime 88 boasts an in-house wine cellar with an extensive collection.

“There’s a wine for everybody,” said Brian Hession, general manager of Prime 88.

The steakhouse also offers a selection of craft cocktails, including The Floridian (Cane Run rum, fresh orange juice, fresh mint, lime, simple syrup, soda); Tropical Express (Wheatley vodka infused with fresh pineapple); and its signature, a favorite of Corbin’s: the Prime 88 Manhattan (Woodford Reserve, Noilly Prat, orange bitters, Bordeaux cherry).

“People didn’t think we could do something like this in Brooksville,” said Hession. “(We) try to be ahead of the curve because this area keeps growing. (Prime 88) is the first of its level (locally).”

The establishment has hosted everything from corporate events to parties to wine dinners, making it a destination for your next special night out. The restaurant features an inviting outdoor patio, a lively bar and a welcoming main dining area. Patrons enjoy live entertainment every Friday and Saturday night. Prime 88 also has a luxurious private dining room, which is available for event booking.

“It’s definitely a special occasion place,” said Hession. “Every night we have couples celebrating anniversaries and people celebrating birthdays.”

In addition to its delicious menu offerings and upscale atmosphere, Prime 88 is also committed to providing exceptional service.
